If you’re trying to reach Paul Pickhardt this weekend, forgive him if he doesn’t get back to you right away. He’ll be kind of busy, preparing a delectable meal for oh, about 300 people.

Pickhardt, Lakeland’s associate professor of biology and chair of the natural sciences division, is one of this year’s 20 “Men Who Cook.” On Saturday night at Blue Harbor Resort, he will cook and serve one of his favorite meals as part of Safe Harbor’s biggest fundraiser. Safe Harbor is a domestic abuse and sexual assault shelter in Sheboygan.

Each of the 20 chefs will prepare small portions for the guests to sample.

Pickhardt’s dish is grilled Tandoori Chicken with Tamarind Sauce over coconut rice. The prep work begins Friday night, when he will marinate chicken breasts in organic yogurt and spice the meat with turmeric, cayenne, ginger and other spices.

“I love to cook, and am extremely honored to have been nominated to do this,” said Pickhardt. “This event is for a really good cause. Safe Harbor is such an important resource in our community and I think it’s great that Lakeland is supporting its mission by sponsoring me.”
